What You Will Actually Do

This is not simply a visit to a knife shop. You will work on your own Japanese kitchen knife step by step with the guidance of an experienced craftsman.

1. Choose Your Knife

Choose your preferred Japanese kitchen knife style from four popular options:

Santoku – A versatile all-purpose Japanese kitchen knife.
Gyuto – Ideal for slicing meat, fish, and vegetables.
Nakiri – Designed especially for preparing vegetables.
Bunka – A distinctive multipurpose knife with a sharp angled tip.

Availability may vary depending on the day.

2. Polishing

Learn how the surface of the blade is finished and take part in polishing your own knife under the craftsman’s guidance.

3. Create Your Own Hand-Drawn Design

This is one of the most distinctive parts of the experience.

Instead of being limited to a standard name engraving, you can draw directly on the blade by hand.

Create your own:

  • Name
  • Initials
  • Personal message
  • Symbol
  • Small illustration or artwork

Your own handwriting and design become part of the finished knife.

4. Etching

Experience the etching process that reveals the beautiful Damascus pattern.

At the same time, your own hand-drawn design appears on the blade together with the Damascus pattern, creating a knife that is truly personal to you.

5. Sharpening

Learn how the cutting edge is finished and sharpen your own knife with guidance from the craftsman.

You will also gain a better understanding of how a Japanese kitchen knife should be maintained and cared for.

6. Test Cutting

Once your knife is completed, test its sharpness yourself.

This is the moment when the knife you have worked on becomes a practical kitchen tool ready to use.

7. Take Your Knife Home

Your finished knife is not a display piece or a temporary workshop sample.

It is your own practical Japanese kitchen knife, and you take it home with you on the same day.

Every time you use it in your kitchen, it can remind you of the people, craftsmanship, and experience behind it.

Why This Experience Is Different

Many travelers buy Japanese knives while visiting Tokyo, Kyoto, or Osaka.

In Seki, however, you can go beyond simply buying a finished knife and experience part of the craftsmanship yourself.

A Real Knife, Not Just a Souvenir

You work on a practical Damascus Japanese kitchen knife designed for everyday cooking.

Your Own Hand-Drawn Design

The personalization is not limited to having a name added to the blade.

You draw your own name, message, symbol, or artwork by hand before the etching process reveals it on the blade.

Multiple Hands-On Processes

You participate in several important finishing stages, including:

Polishing → Hand-Drawing → Etching → Sharpening → Test Cutting

Learn Directly from an Experienced Craftsman

The experience is guided step by step by a craftsman with more than 50 years of knife-making experience.

No previous knowledge or knife-making experience is required.

Take Home What You Made

At the end of the experience, the actual knife you worked on becomes yours.

This is not simply a souvenir-making activity.

It is an opportunity to experience Japanese craftsmanship from the inside and take a piece of that experience home with you.

Why Seki? — More Than 700 Years of Blade Craftsmanship

Seki City in Gifu Prefecture has been associated with Japanese blade craftsmanship for more than 700 years.

The area became famous for Japanese sword making and developed a reputation for the quality, sharpness, and durability of its blades.

Today, Seki is internationally known for high-quality kitchen knives, cutlery, and other edged tools.

The tools have changed from samurai swords to modern kitchen knives, but many of the values remain the same:

precision, patience, skill, discipline, and continuous improvement.

By visiting Seki and meeting the people who continue this craftsmanship today, you can experience a side of Japan that is difficult to understand simply by shopping for a finished knife.
